Vegetables Last For Weeks Beyond Their ‘Best By’ Date Vegetables usually last around one to two weeks in the fridge and not all of them come with an expiration date. Carrots, cauliflower, broccoli, celery, and spinach that have a date often last longer than their date suggests.

Many vegetables don’t reach develop a slimy texture, brown spots, and rotten smell once they go bad, and sometimes they don’t even reach this point until a couple of weeks. However, since they’re chopped, prepackaged greens often go bad around their expiration date.
